HORECA Master Chef competition: -your soups-

From Couscous revisited to land & sea fusion, the Maitre Chef HORECA competition encourages our top chefs to keep innovating and to bring out all their know-how and expertise in dishes with thousands of flavours.
This year, our top chefs from 4 different hotels will be challenging themselves to come up with a must-try dish for the Algerian table: Soup. However simple it may be, our chefs will have to use their imagination and creativity to come up with an out-of-the-ordinary soup in order to stand out as THE HORECA Master Chef 2025.

Modern Makrout competition

A modern reinterpretation of a national treasure, the Makrout.
Revisit and reinterpret the famous traditional Algerian cake with a touch of innovation. Participants will have the unique opportunity to reinvent this classic cake, adding a contemporary dimension while respecting the flavours and authenticity of Algerian cuisine.
The competition is also a vibrant celebration of Algerian culture, honouring this sweet delicacy that has spanned generations.
Each creation will be a tribute to our culinary heritage, while opening the way to new inspirations.

Sweet Dates Competition

The “Douceur des Dattes” competition is a gourmet celebration honouring the date, Algeria’s emblematic fruit with its rich and varied flavours.
Open to both amateur and professional pastry chefs, the competition invites participants to create innovative and tasty cakes using dates as the main ingredient. Whether by revisiting traditional recipes or dreaming up new creations, the possibilities are endless. Creations will be judged on their originality, presentation and, of course, taste, but also on their ability to sublimate the natural treasure that is dates.

Master Breakfast competition

The “Master Breakfast” competition is a morning feast dedicated to the delights of the first meal of the day.
Open to all cooking enthusiasts and professionals, the competition invites participants to create balanced, innovative and appetising breakfasts.
Dishes will be judged on their originality, presentation and taste, with particular attention paid to nutritious ingredients and diversity of flavours.
Whether it’s fluffy pancakes, vitamin-packed smoothies, creative toast or revisited cereal bowls, each creation promises to delight the taste buds and inspire new morning habits.

Participants will have the opportunity to give free rein to their culinary imagination to create delicious and innovative burgers. Whether they opt for a classic recipe revisited with a personal touch or a completely new creation, each burger will be much more than a simple dish – it will be an expression of the passion and creativity of each participating chef.

Demonstration and Tasting of Olive Oil "Huilerie El Asslia"

The very prestigious “Huilerie El Asslia” holder of the gold medal for olive oil in Dubai, will participate in the SIEL-HORECA Expo 2021 by offering you a Demonstration followed by a tasting of Olive Oil from high quality.

The demonstration and tasting will be held on Wednesday, December 1, 2021 from 12:00 p.m. to 4:00 p.m. at the Algiers CIC International Conference Center.

The "Maître-Chef Horeca 2021" competition under the theme of "Chef's Couscous revisited"

The SIEL HORECA Expo 2021 is pleased to present to you the “Maître-Chef Horeca 2021” competition which will see the chefs of the most prestigious hotels in Algiers compete against each other, under the theme of “Chef’s Couscous Revisited”, the respective Chefs of  Sheraton Club des Pins, Hayat Regency, Holiday Inn and Sofitel in Algiers, will compete to be elected “Maître-Chef Horeca 2021”

The “Maître-Chef Horeca 2021” competition will be hosted by Chef Messili, 1st ambassador of organic Mediterranean cooking in the USA In 7 different states and Gold medalist at the Universal Expo in Milan, who will also be part of the Jury with of 5 other great chefs of Algerian cuisine.

Following his internship at the prestigious VATEL school, he began his career as a chef de partie at the hotel d’orient in Bejaia and rose through the ranks to become the executive chef at the military hotel in Beni Messous.

With more than 37 years of experience to his credit, the chef kennas has chosen ESHRA and since 2020 has become Executive Chef at L’Ecole Supérieure d’Hôtellerie et de Restauration d’Alger.

The Superior School of Hospitality and Catering of Oran (ESHRA Oran) will be present at SIEL-HORECA Expo 2021 to make a Culinary demonstration “Asian Flavors” led by Chef Malki who will be Assisted by a student.

Chef Malki will present the following three dishes:

• Thaî fish curry
• Sweet and sour chicken
• Stir fried beef
